Spaghetti Squash/19.Jan.2013

Today, I decided that DH and I were going to embark on a new adventure in gastronomy and made spaghetti with spaghetti squash.  I was kinda nervous, because I am not necessarily a huge veggie fan.  Grilled summer squashes are okay sometimes, and pumpkin is always delicious in a Thanksgiving torte, but I wasn't sure what to expect with spaghetti squash.

I decided to take the more time consuming route and bake it in the oven as opposed to nuking it in the micro.    I struggled a bit cutting it in half.  I utilized my age old pumpkin scooping method to remove the seeds and middle pulp.  Then, the part that looked the most fun, the forking out of the 'meat.'  It really DID come out looking like spaghetti noodles.  When I removed it, I transferred it to a pan and sauteed it a bit in some olive oil and salted it a bit.  I tasted it.  It was good!  I couldn't wait to smother it with the sausage and red sauce!

It was delicious!  It was a filling meal AND I didn't feel like there was a lump of dough in my gut.  Plus, I could proudly say I ate my vegetables!  Next time, I'm going to see if DS will try it.
