Homemade Goodness/18.January.2013
Oh, today was a day of home cooking and it was all delicious. I've been wanting to go out for breakfast for a while, but, that's not really an economically wise option at this juncture, so, I scanned Pinterest for a recipe for sausage gravy. I ended up doctoring it and making it with Turkey Sausage and instead of biscuits, I opted for some sprouted grain toast. I made my own version of the Country Scramble that used to be offered by Denny's. I loved it. I even had gravy and toast with my salad at lunch. I had been craving it for a while.
I also found a recipe for a mini batch of chocolate chip cookies. It supposedly was enough to make 2, but I got 4 out of it and could have probably gone smaller than that. Tasty, and I only had one. The nice part about that recipe is that we ate the whole batch in a matter of minutes and didn't have to feel guilty at all!
For dinner, I made chicken enchiladas without the tortillas. It's SO good on a bed of romaine and just what the doctor ordered: low carb dinner, filling and tasty!
I'm working third shift over the weekend, so, my goal is to abstain from eating at night, and to try to get adequate sleep. I want to keep my eating on a regular schedule and hope to fit another workout in, but I don't think it will be tomorrow. If I'm up and can wing it, I'll go to Zumba in the morning, but I didn't get enough sleep. So, I don't know if that's going to happen. I know Monday and Wednesday next week for sure. I need to make Friday morning a priority.
This morning, we moved DS's big boy bed from storage and set it up! He loves it! It was so cute, the first thing he did was climb up on it and lay down and pretended to sleep. These are things I would hate to miss.
